Soak the rice, dal and fenugreek seeds in sufficient water for 5-6 hours. Drain and blend to make a smooth paste.
Transfer the paste to a large bowl, add salt and mix well. Cover and ferment for 8-10 hours.
For the filling, heat oil in a pan, add mustard seeds, asafoetida, curry leaves and green chillies. Sauté for a couple of minutes.
Add onions and sauté until it turns golden.
Add boiled mashed potatoes, salt, turmeric powder and mix well. Cook for 5-7 minutes.
Lightly grease a non-stick pan and pour a ladleful of the fermented batter and spread it in a circular motion to make a thin dosa.
Smear a little oil around the edges and cook until the dosa is crispy and golden.
Place a portion of the filling on one half of the dosa and fold over.
Serve hot with chutney and sambhar.
