Masala dosa is a famous South Indian dish that is loved all over the world. It is a thin and crispy rice and lentil crepe filled with a spiced potato mixture. It is served with a variety of chutneys and sambar, a lentil soup with vegetables. It is one of the healthiest dishes and is considered as comfort food. It is a good source of carbs and proteins.

Step 1:

Soak the rice, dal and fenugreek seeds in sufficient water for 5-6 hours. Drain and blend to make a smooth paste.

Step 2:

Transfer the paste to a large bowl, add salt and mix well. Cover and ferment for 8-10 hours.

Step 3:

For the filling, heat oil in a pan, add mustard seeds, asafoetida, curry leaves and green chillies. Sauté for a couple of minutes.

Step 4:

Add onions and sauté until it turns golden.

Step 5:

Add boiled mashed potatoes, salt, turmeric powder and mix well. Cook for 5-7 minutes.

Step 6:

Lightly grease a non-stick pan and pour a ladleful of the fermented batter and spread it in a circular motion to make a thin dosa.

Step 7:

Smear a little oil around the edges and cook until the dosa is crispy and golden.

Step 8:

Place a portion of the filling on one half of the dosa and fold over.

Step 9:

Serve hot with chutney and sambhar.
