Peel and cut the mangoes into small cubes.
Heat the oil in a pan and add the mustard seeds. When they start to splutter, add the fenugreek seeds and fry for a few seconds.
Add the mango cubes and fry for a few minutes.
Add the red chili powder, turmeric powder, asafoetida, jaggery, tamarind paste and salt. Mix well.
Cook on low heat for 10-15 minutes, stirring occasionally.
Allow the pickle to cool and store in an airtight container.
