Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric, garam masala, chili powder, and salt and cook for another minute.
Add the lentils and water and bring to a boil.
Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
Taste and adjust seasoning if necessary.
