Ladies Finger Curry, also known as Bhindi Masala, is a popular dish from Indian cuisine. The base of the curry is the lady's finger, or okra, which is cooked in a mixture of aromatic spices like turmeric, red chili powder, coriander powder, and cumin seeds, along with onion, garlic, and tomatoes. This dish is especially popular in the northern parts of India and pairs well with rice or roti. It is a good source of fiber, Vitamin A, Vitamin C, and folate.

Wash the lady's finger and pat dry. Cut into 1 inch pieces.
Heat oil in a pan and add cumin seeds. Once they splutter, add onions and garlic and sauté until golden brown.
Add the chopped tomatoes and cook till they turn mushy.
Add turmeric, chili, and coriander powder. Saute for 2-3 minutes.
Add the lady's finger and toss well to coat with the masala. Cover and cook for 15-20 minutes on medium heat, stirring occasionally.
Once the lady's finger is cooked, add salt to taste and mix well.
Serve the Ladies Finger Curry hot with steamed rice or roti.
