In a large bowl, mix together the rice flour, corn flour, besan, turmeric powder, red chilli powder, ajwain and salt.
Add the oil and mix well.
Gradually add the water and mix to form a dough.
Knead the dough for 5 minutes until it is smooth and pliable.
Divide the dough into small balls.
Heat the oil in a deep pan over medium heat.
Take one ball of dough and roll it out into a thin sheet.
Cut the sheet into small diamond shapes.
Carefully drop the diamond shaped pieces into the hot oil.
Fry the kurkure until they are golden brown and crisp.
Remove the kurkure from the oil and drain on paper towels.
Serve the kurkure hot with your favorite dip. Enjoy!
