Wash and peel the kinoo and cut them into small pieces.
Heat the mustard oil in a pan and add the fennel, fenugreek, cumin, coriander, red chili powder, turmeric, salt, sugar, black pepper, asafoetida, mustard seeds, nigella seeds, fenugreek leaves, curry leaves, tamarind paste, and jaggery.
Stir the mixture and cook for a few minutes until the spices are fragrant.
Add the kinoo pieces and mix well.
Cook for 10-15 minutes until the kinoo pieces are soft and the mixture is thick.
Allow the mixture to cool and store in an airtight container.
Serve the kinoo ka achaar with roti or paratha.
