Kari Ayam is a popular Malaysian dish consisting of chicken cooked in a spicy curry sauce. The dish is usually served with steamed white rice or roti canai. The curry sauce is made with coconut milk, shallots, ginger, garlic and birds eye chili. The dish is usually quite spicy, but can be adjusted to suit individual tastes. Some variations also add a dash of fish sauce for that umami flavour.

Heat the oil in a large pan over medium heat.
Add the curry powder, turmeric powder, cumin, coriander, chilli powder, ginger, garlic paste, onion paste, tomato paste and tamarind paste. Stir to combine.
Add the chicken pieces and stir to coat with the spices.
Cook for 5 minutes, stirring occasionally.
Add the coconut milk and salt to taste. Bring to a boil, then reduce the heat and simmer for 15 minutes, stirring occasionally.
Add the chopped fresh coriander leaves and stir to combine.
Serve hot with steamed rice or naan bread. Enjoy!
