Wash and cut the karela into thin slices.
In a bowl, add the karela slices, turmeric powder, red chilli powder, coriander powder, cumin powder, amchur powder, garam masala and salt. Mix everything together and set aside.
Heat oil in a pan over medium heat. Add cumin seeds, fenugreek seeds, mustard seeds and asafoetida.
Once the seeds start to crackle, add the chopped onion and sauté until it turns golden brown.
Add the karela slices and mix everything together.
Cover the pan and cook for 10 minutes, stirring occasionally.
Add the chopped tomato and mix everything together.
Cover the pan and cook for another 5 minutes.
Add the chopped coriander leaves and mix everything together.
Serve hot with chapati or rice. Enjoy!
