Wash and cut the karela into thin slices.
In a bowl, mix together the turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala, amchur powder and salt.
Add the karela slices to the spice mix and mix well.
Heat the oil in a pan over medium heat.
Add the cumin seeds, mustard seeds, fenugreek seeds and asafoetida.
When the seeds start to splutter, add the green chillies and ginger.
Add the karela slices and mix well.
Cover the pan and cook for 10 minutes, stirring occasionally.
Uncover the pan and cook for another 5 minutes, stirring occasionally.
Garnish with chopped coriander leaves and serve hot.
