Heat oil in a pan over medium heat.
Add mustard seeds, cumin seeds, dried red chillies and fenugreek seeds. Fry for a few seconds.
Add turmeric powder, asafoetida, green chillies, onion, garlic and ginger. Fry for a few minutes.
Add tamarind paste, jaggery, coriander powder, red chilli powder, garam masala and black pepper powder. Fry for a few minutes.
Add chopped tomatoes and coriander leaves. Fry for a few minutes.
Add salt to taste and mix well.
Add 1 cup of water and bring to a boil.
Reduce heat and simmer for 10-15 minutes.
Serve hot with steamed rice.
