Ingredients

kala chana (black chickpeas)

1 cup

onion, chopped

1

tomatoes, chopped

cloves garlic, minced

ginger, minced

1 teaspoon

cumin seeds

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

red chilli powder

1 teaspoon

turmeric powder

1/2 teaspoon

amchur powder (dried mango powder)

1/2 teaspoon

cumin powder

1/4 teaspoon

black pepper powder

1/4 teaspoon

dry fenugreek leaves

1/4 teaspoon

oil

2 tablespoons

Salt to taste

Directions

Step 1:

Soak the kala chana overnight in enough water.

Step 2:

Drain the water and pressure cook the kala chana with enough water and salt for 3-4 whistles.

Step 3:

Heat oil in a pan and add cumin seeds.

Step 4:

When the cumin seeds start to crackle, add the chopped onions and sauté until they turn golden brown.

Step 5:

Add the ginger and garlic and sauté for a few seconds.

Step 6:

Add the chopped tomatoes and cook until they turn soft and mushy.

Step 7:

Add the coriander powder, garam masala, red chilli powder, turmeric powder, amchur powder, cumin powder, black pepper powder and dry fenugreek leaves.

Step 8:

Mix everything together and cook for a few minutes.

Step 9:

Add the cooked kala chana and mix everything together.

Step 10:

Add enough water and salt to taste.

Step 11:

Simmer the kala chana masala for 10-15 minutes or until the gravy thickens.

Step 12:

Serve hot with chapatis or rice.
