Kaju Katli Mithai is a popular Indian sweet made from cashews, sugar, ghee and cardamom powder. It's one of the most common sweets in India, especially during the Diwali festival. Known for its rich and melt-in-the-mouth texture, it gets its unique flavor from cardamom and its sweetness from sugar. Kaju Katli is also often garnished with silver varq for an additional aesthetic touch.

Grind the cashews into a fine powder using a blender.
In a pan, add sugar and water and heat it on a low flame, stirring continuously until the sugar dissolves.
Add the powdered cashews and ghee to the sugar syrup and keep stirring until the mixture thickens and leaves the sides of the pan.
Add the cardamom powder and mix well.
Transfer the mixture to a greased plate and spread it evenly.
Allow it to cool and then cut into diamond shapes.
Serve the kaju katli as is or store it in an airtight container.
