Grind the cashew nuts into a fine powder in a food processor.
In a heavy-bottomed pan, add the sugar and water and bring to a boil.
Once the sugar syrup has reached a one-string consistency, add the ground cashew powder and mix well.
Cook the mixture on low heat, stirring continuously, until it starts to thicken.
Add the cardamom powder and ghee and mix well.
Grease a plate with ghee and pour the mixture onto it.
Spread the mixture evenly and flatten it with a rolling pin.
Cut into diamond shapes and sprinkle rose water on top.
Allow the kaju katli to cool and set before serving.
