Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and fry for a few seconds.
Add cubed kaddu and stir-fry for a few minutes.
Add turmeric powder, red chilli powder, coriander powder and garam masala and mix well.
Add green chillies and coriander leaves and mix well.
Add salt to taste and mix well.
Cover the pan and cook for 10-15 minutes or until the kaddu is cooked through.
Serve hot with chapatis or rice.
