Cut the jackfruit into small cubes and set aside.
Heat the oil in a large skillet over medium heat. Add the cumin, coriander, turmeric, garam masala, chili powder, and salt. Stir to combine.
Add the onion, tomato, cilantro, mint, green chilies, ginger, garlic, cashews, and raisins. Cook for 5 minutes, stirring occasionally.
Add the jackfruit cubes and cook for another 5 minutes.
Add the coconut milk and stir to combine. Simmer for 10 minutes, stirring occasionally.
