Aloo Paratha is a popular Indian breakfast dish comprising of unleavened dough stuffed with a spicy mixture of mashed potato. This dish is predominant in Punjab but is loved and consumed across all regions in India. It is usually served with butter, curd, pickle or chutney. High in carbohydrates and proteins, it makes for a satisfying and filling breakfast option.

In a large bowl, mix the wheat flour with a little salt and knead it into a soft dough using water. Let it rest.
In another bowl, mix the mashed potatoes, chopped onion, green chillies, turmeric powder, red chilli powder, cumin powder, garam masala and salt. Mix well until all ingredients are well combined.
Divide the dough and the potato mixture into equal portions.
Roll out one portion of the dough, place a portion of the potato mixture in the centre, and fold the dough around it. Roll it out again gently.
Heat a tawa (griddle) and place the rolled paratha on it. Cook on both sides, applying a bit of ghee or oil, until golden brown.
Serve hot with butter, curd, pickle or chutney.
