About

Idiyappam is a traditional South Indian dish made from rice flour. It is also known as string hoppers or noolappam. It is made by steaming a dough made from rice flour, salt, and water. The dough is then pressed through a special mould to form thin strands of dough which are then steamed. Idiyappam is usually served with a spicy coconut-based curry or stew. It can also be served with sweetened coconut milk or jaggery.

Ingredients

rice flour

2 cups

salt

1/2 teaspoon

sugar

1/2 teaspoon

baking soda

1/2 teaspoon

water

2 cups

melted ghee or butter

2 tablespoons

Directions

Step 1:

In a large bowl, mix together the rice flour, salt, sugar, and baking soda.

Step 2:

Add the water and mix until a thick batter is formed.

Step 3:

Heat a non-stick pan over medium heat.

Step 4:

Grease the pan with some melted ghee or butter.

Step 5:

Pour a ladleful of the batter onto the pan and spread it out in a circular motion.

Step 6:

Cover the pan with a lid and cook for 2-3 minutes.

Step 7:

Flip the idiyappam and cook for another 2-3 minutes.

Step 8:

Remove the idiyappam from the pan and serve hot.
