Idiappam is a traditional South Indian dish made from rice flour. It is also known as string hoppers or noolappam. It is made by steaming a dough made from rice flour, salt, and water. The dough is then pressed through a special mould to form thin strands of dough which are then steamed. Idiappam is usually served with a spicy coconut-based curry or stew. It can also be served with sweetened coconut milk or jaggery.

In a bowl, mix together the rice flour, salt, and sugar.
Add the water and mix until it forms a thick batter.
Heat a non-stick pan over medium heat.
Grease the pan with some melted ghee or butter.
Pour a ladleful of the batter onto the pan and spread it out in a circular motion.
Cover the pan and cook for 2-3 minutes.
Flip the appam and cook for another 2-3 minutes.
Remove the appam from the pan and serve hot.
