Uttapam with Suji is a South Indian savoury pancake dish, made from a batter of semolina (Suji/Rava). It's usually topped with finely chopped veggies, making it a healthy and fulfilling meal option. This dish is quite popular as a breakfast item and can be enjoyed with coconut chutney or sambar.

Take suji, yogurt, and salt in a bowl. Add water and mix well to make a thick batter. Leave it aside for 15-20 minutes.
After 20 minutes, mix the batter again and add a little water if required.
Heat a tawa or a non-stick pan. Pour a ladle full of batter on the pan and spread it in a circular motion just like a dosa.
Sprinkle the chopped veggies – onions, tomatoes, capsicum, and carrot. Press the veggies slightly with a spatula.
Drizzle some oil or ghee around the edges and over the veggies. Cook on medium heat until the bottom of the Uttapam begins to get golden brown.
Flip it over and cook the other side.
Serve the Uttapam hot with coconut chutney or sambar.
