Ingredients

semolina (rava/sooji)

1 cup

rice flour

1/2 cup

plain flour (maida)

1/4 cup

finely chopped green chilli

1

finely chopped onion

1

inch grated ginger

1/2

asafoetida (hing)

A pinch

Salt to taste

water

4 cups

Vegetable oil for cooking

Directions

Step 1:

In a bowl, combine the semolina, rice flour, plain flour, green chilli, onion, ginger, asafoetida, and salt.

Step 2:

Gradually add the water while stirring continuously to avoid lumps. The batter should have a thin consistency.

Step 3:

Heat a dosa griddle or a non-stick pan over medium heat and lightly grease it with oil.

Step 4:

Pour a ladle full of batter from the outer edges towards the middle. Do not fill the holes that appear.

Step 5:

Drizzle a little oil over and around the dosa and cook until it turns golden brown.

Step 6:

Flip over and cook the other side till it's crispy and brown.

Step 7:

Fold the dosa in half and serve hot with chutney or sambar.
