large eggs

large onion, finely chopped

medium tomatoes, finely chopped

green chillies, finely chopped

turmeric powder

1/2 teaspoon

red chilli powder

1 teaspoon

garam masala powder

1 teaspoon

Salt to taste

Fresh coriander leaves for garnish

Directions

Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add the finely chopped onion and green chillies to the pan and saute until onions become translucent.

Step 3:

Add the finely chopped tomatoes and cook until they become mushy.

Step 4:

Add the turmeric powder, red chilli powder, garam masala powder, and salt. Mix well and cook for 2 minutes.

Step 5:

Break the eggs into the pan and scramble them. Cook until the eggs are fully cooked and have mixed well with the masala.

Step 6:

Garnish with fresh coriander leaves.

Step 7:

Serve the egg bhurji hot with bread or rotis.
