Chop all the vegetables into bite-size pieces.
In a large pot, heat the olive oil over medium heat. Add the onions, garlic, carrots, celery, and bell pepper. Cook until the vegetables are slightly softened.
Add the tomatoes, green beans, potatoes, and peas. Cook for a few more minutes.
Add the vegetable broth, basil, oregano, salt, and pepper. Bring the soup to a boil.
Once boiling, lower the heat and let the soup simmer for about 20-30 minutes or until all the vegetables are cooked.
Add the spinach and cook for a few more minutes.
Serve the soup hot with a bread roll.
