Soak the toor dal in water for about 30 minutes.
Heat oil in a pan and add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida.
Add the chopped onions, green chillies, curry leaves, and coriander leaves.
Add the chopped tomatoes, potatoes, carrot, and drumstick.
Add the sambar powder, turmeric powder, tamarind paste, jaggery, and salt.
Add the soaked toor dal and mix well.
Add 2 cups of water and bring to a boil.
Simmer for about 15 minutes or until the vegetables are cooked.
Serve hot with steamed rice.
