Directions

Step 1:

Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Step 2:

Add the curry powder, cumin, coriander, turmeric, ginger, cardamom, cinnamon, pepper, and salt. Cook, stirring, for 1 minute.

Step 3:

Add the chicken and cook, stirring, until lightly browned, about 5 minutes.

Step 4:

Add the tomatoes, coconut milk, and water. Bring to a boil, reduce the heat to low, and simmer, stirring occasionally, until the chicken is cooked through, about 20 minutes.

Step 5:

Stir in the cilantro and serve.
