In a large pot, heat the ghee and oil over medium heat.
Add the onions and cook until softened, about 5 minutes.
Add the garlic, ginger, garam masala, turmeric, cumin, coriander, chili powder, and salt. Cook for 1 minute.
Add the chicken and cook until lightly browned, about 5 minutes.
Add the rice and stir to combine.
Add the water, yogurt, cashews, and raisins. Stir to combine.
Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes.
Remove from heat and let sit for 10 minutes.
Fluff with a fork and garnish with cilantro. Serve hot.
