Mash the avocados in a bowl until they're creamy.
Mix in the chopped onion, diced tomatoes, lime juice, and salt to create the guacamole.
Spread the butter on one side of each slice of bread.
On the unbuttered side of two bread slices, spread a generous layer of guacamole.
Add the diced cucumber and shredded lettuce on top of the guacamole.
Top with the remaining slices of bread, buttered side out.
Heat a pan over medium heat and place the sandwiches in the pan.
Cook until the bread is golden brown, then flip and cook the other side.
Serve the Guacamole Sandwich hot with a side of chips or salad.
