Heat the oil in a large pan over medium heat.
Add the cumin, mustard and fenugreek seeds and fry for a few seconds until fragrant.
Add the turmeric, coriander, capsicum, onion, garlic and ginger and fry for a few minutes until the vegetables are softened.
Add the chilli powder and garam masala and fry for a further minute.
Pour in the coconut milk and bring to a simmer.
Simmer for 10 minutes until the sauce has thickened.
Season with salt to taste.
Serve with steamed rice or naan bread.
