Heat the oil in a large skillet over medium-high heat.
Add the cumin and mustard seeds and cook until they start to sizzle.
Add the turmeric, coriander, red chili powder, garam masala, amchur powder and salt. Stir to combine.
Add the onion, tomato, cilantro, ginger, and garlic. Cook for 2-3 minutes, stirring occasionally.
Add the cauliflower florets and stir to combine.
Cover the skillet and reduce the heat to low. Cook for 10-15 minutes, stirring occasionally, until the cauliflower is tender.
Serve hot with rice or roti. Enjoy!
