Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and fry for a few seconds.
Add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder, salt, sugar and ginger-garlic paste and fry for a few seconds.
Add onion and fry until golden brown.
Add tomatoes and green chillies and fry for a few minutes.
Add cauliflower florets and fry for a few minutes.
Add 1/2 cup of water and cover the pan with a lid.
Cook for 10-15 minutes or until the cauliflower is cooked.
Garnish with fresh coriander leaves and serve hot.
