cauliflower, cut into florets

1 large head

large potatoes, peeled and cut into cubes

coriander powder

1 teaspoon

garam masala

1 teaspoon

turmeric powder

1 teaspoon

red chili powder

1 teaspoon

amchur powder

1 teaspoon

salt

1 teaspoon

oil

2 tablespoons

ginger

1 teaspoon

garlic paste

large onion, finely chopped

green chilies, finely chopped

1 teaspoon

coriander leaves, finely chopped

Directions

Step 1:

Heat oil in a large pan over medium heat.

Step 2:

Add cumin seeds and let them sizzle.

Step 3:

Add the potatoes and cauliflower and stir-fry for a few minutes.

Step 4:

Add the ginger-garlic paste, onion, green chilies, and all the spices.

Step 5:

Stir-fry for a few minutes until the vegetables are lightly browned.

Step 6:

Add 1/2 cup of water and cover the pan.

Step 7:

Cook for 10-15 minutes until the vegetables are tender.

Step 8:

Add the cumin powder and coriander leaves and stir to combine.

Step 9:

Serve hot with chapatis or rice.
