Gajar ka Halwa (Carrot Halwa) is a traditional dessert from the Indian subcontinent. It is made from grated carrots, milk, ghee, sugar and various dry fruits. It is particularly popular during the winter months when fresh and juicy red carrots are available in abundance. The dish is rich and creamy with a wonderful flavor and the sweet aroma of cardamom and saffron.

In a large pan, heat the ghee.
Add the grated carrots and stir on medium heat until they become translucent.
Add the milk and sugar and stir the mixture occasionally to prevent it from sticking to the pan.
Cook until the milk has been fully absorbed and the carrots are thoroughly cooked.
Add the cardamom powder and mixed dry fruits.
Keep stirring until the mixture thickens.
Serve the Gajar ka Halwa hot or cold, garnished with some more dry fruits.
