In a large pan, heat the ghee.
Add the grated carrots and stir on medium heat until they become translucent.
Add the milk and sugar and stir the mixture occasionally to prevent it from sticking to the pan.
Cook until the milk has been fully absorbed and the carrots are thoroughly cooked.
Add the cardamom powder and mixed dry fruits.
Keep stirring until the mixture thickens.
Serve the Gajar ka Halwa hot or cold, garnished with some more dry fruits.
