Heat the vegetable oil in a large wok or frying pan over medium-high heat.
Add the onions and garlic and stir-fry until they are golden brown.
Add the mixed vegetables and stir-fry for approximately 5 minutes, until they are tender.
Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs and mix them with the vegetables.
Add the cooked rice, soy sauce, salt, and black pepper to the pan. Stir-fry for a few more minutes until everything is well combined and the rice is heated through.
Serve the fried rice hot, garnished with spring onions if desired.
