cooked white rice

2 cups

eggs

vegetable oil

2 tablespoons

diced onion

1/4 cup

diced bell pepper

1/4 cup

diced carrots

1/4 cup

frozen peas

1/4 cup

soy sauce

2 tablespoons

Salt and pepper to taste

Directions

Step 1:

Heat the oil in a large skillet over medium heat.

Step 2:

Add the onion, bell pepper, and carrots and cook until softened, about 5 minutes.

Step 3:

Add the frozen peas and cook for another 2 minutes.

Step 4:

Push the vegetables to the side of the skillet and crack the eggs into the center.

Step 5:

Scramble the eggs until cooked through, about 2 minutes.

Step 6:

Add the cooked rice and soy sauce and stir to combine.

Step 7:

Season with salt and pepper to taste.

Step 8:

Serve hot. Enjoy!
