Heat the oil in a large skillet over medium heat.
Add the cumin and mustard seeds and cook until they start to sizzle.
Add the turmeric, coriander, and garam masala and stir to combine.
Add the onion, garlic, ginger, and green chillies and cook until the onion is softened, about 5 minutes.
Add the tomatoes and cook until they are soft and beginning to break down, about 5 minutes.
Add the eggs and stir to combine.
Season with salt and cook for another 5 minutes.
Garnish with cilantro and serve.
