cooked white rice

2 cups



vegetable oil

2 tablespoons

diced onion

1/2 cup

diced carrots

1/2 cup

frozen peas

1/2 cup

soy sauce

2 tablespoons

Salt and pepper to taste



Step 1:

Heat the oil in a large skillet over medium-high heat.

Step 2:

Add the onion and carrots and cook until softened, about 5 minutes.

Step 3:

Add the peas and cook for another 2 minutes.

Step 4:

Push the vegetables to the side of the pan and add the eggs. Scramble the eggs until cooked through.

Step 5:

Add the cooked rice to the pan and stir to combine.

Step 6:

Add the soy sauce and stir to combine.

Step 7:

Season with salt and pepper to taste.

Step 8:

Serve hot. Enjoy!
