Heat oil in a pan, add cumin seeds and wait till they splutter.
Add chopped onions and green chillies, fry till onions turn golden brown.
Add ginger-garlic paste and fry for another minute.
Add chopped tomatoes, red chilli powder, turmeric powder, garam masala, and salt. Cook till the tomatoes are soft and the spices are well cooked.
Add the hard boiled eggs and mix gently. Let it cook for another 2-3 minutes.
Egg curry is ready to be served with rice or Indian bread.
