Dal Vada is an Indian snack made from a combination of lentils, spices, and herbs. It is usually deep-fried and served with chutney or other accompaniments. The main ingredients of Dal Vada are split Bengal gram (chana dal), split black gram (urad dal), rice, ginger, green chillies, curry leaves, and salt. Soak the chana dal in enough water for at least 4 hours.
Drain the water and grind the dal to a coarse paste using very little water.
Heat oil in a pan and add the cumin seeds, mustard seeds, fenugreek seeds and asafoetida.
When the seeds start to crackle, add the turmeric powder, red chilli powder, coriander powder and ginger paste.
Add the ground dal paste and mix well.
Add the green chillies, coriander leaves, curry leaves and salt.
Mix everything together and cook for a few minutes.
Take the mixture off the heat and let it cool.
Once cooled, shape the mixture into small round vadas.
Heat oil in a deep pan and deep fry the vadas until golden brown.
Serve hot with chutney or sauce.
