Soak the toor dal in water for at least 30 minutes.
Heat oil in a pressure cooker. Add cumin seeds and mustard seeds and let them splutter.
Add the chopped onion, ginger-garlic paste, and green chilies. Saute for a few minutes until the onion is lightly browned.
Add the chopped tomatoes and all the spices (turmeric powder, red chili powder, garam masala, coriander powder, amchur powder, and salt). Saute for a few minutes until the tomatoes are soft.
Add the spinach and jaggery (if using). Saute for a few minutes until the spinach is wilted.
Add the soaked toor dal and 2 cups of water. Close the lid of the pressure cooker and cook for 3-4 whistles.
Once the pressure is released, open the lid and mash the dal with a spoon.
Serve hot with steamed rice or roti. Enjoy!
