Rinse the lentils thoroughly until the water runs clear.
Boil the lentils in 3 cups of water with a pinch of salt and turmeric until it is cooked and soft.
Heat the oil or ghee in a pan and add mustard seeds. Once they start popping, add cumin seeds.
Add the chopped onions and green chillies to the pan and sauté until the onions turn translucent.
Add the minced ginger and garlic and continue to sauté for a minute.
Add the chopped tomatoes, red chilli powder, and salt. Cook until the tomatoes are soft and mushy.
Add the cooked lentils to the pan and mix well. Cook for another 5 minutes.
Garnish with fresh coriander and serve hot with rice or Indian bread.
