Rinse the lentils in a bowl of cold water and set aside.
Heat the oil in a large pot over medium heat. Add the mustard seeds, cumin seeds, and asafoetida. Let the spices sizzle for a few seconds.
Add the ginger-garlic paste and sauté for a few seconds.
Add the chopped onion and sauté until the onion is lightly browned.
Add the chopped tomatoes, green chilies, cilantro, cumin powder, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Sauté for a few minutes.
Add the lentils and 2 cups of water. Bring the mixture to a boil.
Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the lentils are cooked and the mixture is thick.
Serve the dal hot with steamed rice or roti. Enjoy!
