Coconut Rice is a simple, flavorful dish that goes great with curries, stir-fries, chicken, or beef. In fact, any dish that goes well with rice would go equally well with this coconut rice! It adds a delicious flavor and the house smells so good while it's cooking. It's a popular dish in the tropical regions especially in the south and east parts like Tamil Nadu, Andhra Pradesh and Kerala. This dish is also served in the cuisines of Thailand, Malaysia, Indonesia, and some Latin American countries.

Rinse the Basmati rice under cold water until the water runs clear.
In a medium saucepan, combine the rice, coconut milk, salt, and fresh or frozen coconut (if using).
Bring the mixture to a boil over medium heat.
Once the mixture is boiling, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes.
After the rice is finished cooking, let it sit for 5 minutes with the lid on the pot to steam.
Remove the lid, fluff the rice with a fork, and serve.
