The potatoes are usually cut into cubes or wedges and then fried until golden brown. Heat the oil in a large pan over medium heat.
Add the cumin, mustard and fennel seeds and fry for a few seconds until they start to crackle.
Add the potatoes and fry for 5 minutes, stirring occasionally.
Add the coriander powder, turmeric powder, red chilli powder, garam masala, amchur powder and salt.
Stir to combine and fry for a further 5 minutes, stirring occasionally.
Add the chopped coriander leaves and green chillies and fry for a further 2 minutes.
Serve hot with chapatis or rice.
