large onion, chopped


cloves garlic, minced


carrots, peeled and diced


celery stalks, diced


pounds boneless, skinless chicken thighs, cut into 1-inch cubes


all-purpose flour

2 tablespoons

chicken broth

2 cups

dried thyme

1 teaspoon

dried oregano

1 teaspoon

bay leaf



1/2 teaspoon

freshly ground black pepper

1/4 teaspoon

potatoes, peeled and diced


frozen peas

1 cup

chopped fresh parsley

2 tablespoons



Step 1:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Step 2:

Add the carrots and celery and cook for another 5 minutes.

Step 3:

Add the chicken and cook until lightly browned, about 5 minutes.

Step 4:

Sprinkle the flour over the chicken and stir to coat.

Step 5:

Add the chicken broth, thyme, oregano, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.

Step 6:

Add the potatoes and simmer for another 15 minutes.

Step 7:

Add the peas and parsley and simmer for 5 more minutes.

Step 8:

Remove the bay leaf and serve. Enjoy!
