Chicken Kolhapuri is a popular Indian dish from the city of Kolhapur in Maharashtra. The dish is known for its vibrant red color and spicy flavor. Marinate the chicken with yogurt, turmeric powder, red chili powder, and ginger-garlic paste. Let it rest for 20-30 minutes.
In a pan, heat the oil and add onions. Sauté until it turns golden brown.
Add the marinated chicken to the pan and cook until it gets half cooked.
Add the pureed tomatoes and Kolhapuri masala to the pan and mix well. Cover it and cook on low heat for 10-15 minutes until the chicken is fully cooked and the spices are well blended.
Serve hot with rice or any Indian bread.
