Basmati Rice

Ghee

Bay Leaves

Onions, finely chopped

Green Chillies, finely chopped

Ginger-Garlic Paste

2 teaspoons

Coriander Powder

2 teaspoons

Red Chilli Powder

1 teaspoon

Garam Masala

1 teaspoon

Turmeric Powder

1 teaspoon

Yogurt

1/2 cup

Chicken, cooked and shredded

2 cups

Cashew Nuts

2 tablespoons

Raisins

2 tablespoons

Salt to taste

Directions

Step 1:

Soak the basmati rice in water for 30 minutes.

Step 2:

Heat ghee and oil in a large pot over medium heat. Add bay leaves, cinnamon sticks, cardamom pods, and cloves. Fry for a few seconds until fragrant.

Step 3:

Add the chopped onions and green chillies. Fry until the onions are golden brown.

Step 4:

Add the ginger-garlic paste, coriander powder, red chilli powder, garam masala, and turmeric powder. Fry for a few minutes until the spices are fragrant.

Step 5:

Add the yogurt and mix well. Cook for a few minutes until the yogurt is cooked through.

Step 6:

Add the cooked and shredded chicken, cashew nuts, and raisins. Mix well and cook for a few minutes.

Step 7:

Add the soaked basmati rice and salt to taste. Mix well and cook for a few minutes.

Step 8:

Add 2 cups of water and bring to a boil. Reduce the heat to low and cover the pot. Simmer for 15-20 minutes until the rice is cooked through.

Step 9:

Serve hot with raita or your favorite accompaniment. Enjoy!
