In a large bowl, combine the chicken mince, breadcrumbs, salt, black pepper, garlic powder, diced onions, and egg. Mix together until everything is well combined.
Shape the mixture into 4 patties.
Heat the olive oil in a frying pan over medium heat. Cook the patties for about 5-6 minutes on each side, until they are fully cooked through.
Toast the hamburger buns lightly.
Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a cooked chicken patty, then top with onion rings, tomato slices, and a slice of cheese. Cover with the top bun.
Serve immediately with ketchup or mayonnaise.
