Chettinad Chicken Gravy is a spicy and flavorful chicken curry recipe from the Chettinad region of Tamil Nadu in South India. This dish is known for its unique blend of spices and the use of coconut. First, make the Chettinad masala. Dry roast the coriander seeds, fennel seeds, cumin seeds, peppercorns, red chilies, and grated coconut until they turn golden. Cool and grind to a powder.
Heat oil in a pan, add mustard seeds and fennel seeds. When they splutter, add chopped onions, tomatoes, and green chillies. Sauté until onions turn golden.
Add the ginger-garlic paste and sauté for a minute, then add the Coriander powder, red chilli powder, turmeric powder and sauté for another minute.
Now add the chicken pieces and cook on high heat for 5-7 minutes.
Add the prepared Chettinad masala, salt, and mix. Add a cup of water and cover the pan. Cook until the chicken is done and the gravy thickens.
Serve the Chettinad Chicken Gravy with rice, dosa or roti.
