First, make the Chettinad masala. Dry roast the coriander seeds, fennel seeds, cumin seeds, peppercorns, red chilies, and grated coconut until they turn golden. Cool and grind to a powder.
Heat oil in a pan, add mustard seeds and fennel seeds. When they splutter, add chopped onions, tomatoes, and green chillies. Sauté until onions turn golden.
Add the ginger-garlic paste and sauté for a minute, then add the Coriander powder, red chilli powder, turmeric powder and sauté for another minute.
Now add the chicken pieces and cook on high heat for 5-7 minutes.
Add the prepared Chettinad masala, salt, and mix. Add a cup of water and cover the pan. Cook until the chicken is done and the gravy thickens.
Serve the Chettinad Chicken Gravy with rice, dosa or roti.
