cauliflower, cut into florets

onion, diced

1/2 teaspoon

can (14.5 ounces) diced tomatoes

coconut milk

1/4 cup

fresh cilantro, chopped

Directions

Step 1:

Heat a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Step 2:

Add the garlic, ginger, cumin, coriander, garam masala, turmeric, chili powder, salt, and pepper. Cook for 1 minute, stirring constantly.

Step 3:

Add the cauliflower florets and cook for 5 minutes, stirring occasionally.

Step 4:

Add the diced tomatoes, vegetable broth, and coconut milk. Bring to a simmer and cook for 10 minutes, stirring occasionally.

Step 5:

Reduce the heat to low and simmer for an additional 10 minutes, or until the cauliflower is tender.

Step 6:

Stir in the cilantro and serve. Enjoy!
