Heat oil in a pan over medium heat.
Add mustard seeds, urad dal, chana dal, and cumin seeds.
When the seeds start to splutter, add the chopped green chillies and grated ginger.
Add the grated carrots and turmeric powder.
Saute for a few minutes until the carrots are cooked.
Add the freshly grated coconut and salt to taste.
Mix everything together and cook for a few more minutes.
Serve hot with steamed rice.
