Heat the oil in a large pan over medium heat.
Add the cumin, mustard and fenugreek seeds and fry for a few seconds until they start to crackle.
Add the turmeric, coriander and red chilli powder and fry for a few seconds.
Add the onions and fry until they are golden brown.
Add the tomatoes, green chillies, garlic and ginger and fry for a few minutes.
Add the capsicum cubes and fry for a few minutes.
Add salt to taste and mix well.
Cover the pan and cook for 10 minutes, stirring occasionally.
Uncover the pan and cook for a few minutes until the capsicum is cooked through.
Garnish with fresh coriander leaves and serve hot.
